Chef/Proprietor Jamie Nicolson is a native to Helensburgh, having spent his early years in Helensburgh before moving to Portugal with his family at the age of 8. In Portugal, Jamie’s family owned a Portuguese restaurant which ignited his passion for cooking. Upon returning to Helensburgh in his late teens Jamie embarked on a career in professional cookery.

 

Jamie trained with MacDonald Hotels and started his career at the 5 star Cameron House Hotel on Loch Lomond. During his time at Cameron House Jamie met legendary chef Albert Roux and was invited to work as a stagiaire in his Michelin starred restaurant Le Gavroche. Jamie returned to Scotland to progress his career in luxury fine dining establishments including Glasgow’s esteemed One Devonshire Gardens. Most recently Jamie was the Executive Head Chef at the world famous Loch Fyne Oyster Bar at Cairndow.

 

Jamie’s cookery is undoubtedly influenced by simple Portuguese flavours and cooking styles. However, Jamie is equally as passionate about the Scottish larder and produce, with a specific flare for fish and seafood. Jamie is passionate about high quality local produce, and letting the seasons determine what goes on the plate.

What to expect

The Park Pavilion Kiosk & Cafe is located at the newly developed Park Pavilion in Hermitage Park, Helensburgh. The kiosk will open May(ish) delighting you with an array of authentic street foods, ice creams, sweet treats, and barista coffee. ​The cafe bar opening will follow in late summer. You can expect modern Scottish cookery with a Portuguese influence with a focus on fresh and sustainable produce.
